No Name® Tilapia Cakes

Ingredients:
2 No Name® Tilapia Fillets
3 Tbls. Mayonnaise
2 tsp. Dill - fresh
2 tsp. Basil - fresh
2 tsp. Lemon Juice - fresh squeezed
1 Tbls. Dijon Mustard
1 tsp. Old Bay Seasoning
20 ea. Ritz Crackers - crushed
1 Egg
2 Tbls. Butter - melted
Dipping Sauce:
½ cup Mayonnaise
1½ Tbls. BBQ Sauce
Salt & Black Pepper - pinch of each to taste
Cooking Directions:
Bake the tilapia according to package directions. Remove from oven and let cool slightly before adding to the other ingredients.
While the Tilapia is baking, blend the remaining ingredients.
Break the Tilapia into pieces and gently mix into the seasoning mixture.
Place the product in the refrigerator for 10-15 minutes to let the ingredients set up.
Form the mixture into patties - 4 large for entrée size or 8 small for appetizers.
Heat a small amount of olive oil in a sauté pan. Over medium heat, place tilapia cakes 2-3 at a time in the sauté pan.
Brown the patties on both sides, just until they get a nice light brown crust, 1-2 minutes per side.
Finish browning the remaining patties.
To finish cooking the Tilapia cakes, bake in the oven at 350 degrees for 7-10 minutes or
until heated through.
Serve with dipping sauce.
