Quick No Name Chicken Jambalaya
Jambalaya is a classic Cajun dish. And with a few time saving short cuts, this delicious, spicy meal can be on the table in just 30 minutes!
Cook No Name Butter Garlic Chicken according to package directions (figure 1/2 chicken breast per person). Slice pre-cooked kielbasa sausage into “coin” sized pieces and saute in a skillet to heat through.
Chop a small onion and a small green pepper (add other colorful peppers, if you’d like). Heat 1 TB extra virgin olive oil in a skillet and saute onion and peppers until the onion is transparent. Add garlic (to your personal taste) and saute for 1-2 minutes.
If you’re really short on time, cook a package of jambalaya rice mix according to package directions.
Otherwise, cook 1 cup of long grain (NOT quick cooking or instant) rice in 1 cup chicken stock/broth (or water) and 1 cup crushed tomatoes with juice until rice is tender and cooked through. Add chili powder and/or cayenne pepper to taste (more if you like spicy, less if you like a lower spice level).
Cut cooked No Name Butter Garlic Chicken into cubes, mix chicken, sausage and onions/pepper mix into rice and serve!
